Ingredients:
๐Ÿฅ” 4 large sweet potatoes
๐Ÿง‚ 1 teaspoon salt
๐ŸŒถ๏ธ 1/2 teaspoon smoked paprika
๐Ÿง„ 1 teaspoon garlic powder
๐ŸŒฟ 1 teaspoon thyme (dried)
๐Ÿซ’ 2 tbsp olive oil
๐Ÿฏ 1 tbsp honey
๐Ÿ‹ Juice of half a lemon
๐ŸŒถ๏ธ Optional: chili sauce for extra spice

Instructions:
Preparing the potatoes:
Preheat the oven to 200ยฐC (convection oven 180ยฐC). Peel the sweet potatoes or leave the skin on for extra crispiness. Cut them into even wedges.
Wedges seasoning:
Mix the olive oil, salt, smoked paprika, garlic powder, and thyme in a large bowl. Add the potato wedges and toss well so that they are completely covered.

Bake:
Place the wedges in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25 minutes, or until golden brown and crispy. Turn once halfway through the baking time.
Honey-lemon glaze:
Mix the honey with the lemon juice and drizzle it over the wedges as soon as they come out of the oven. This gives a delicious sweet and sour taste.
Serve:
Serve the crispy wedges with an optional chili sauce for some extra spice and sprinkle with fresh chives or parsley.
