Ingredients:
🍆 2 large eggplants (sliced)
🧂 Salt to taste
🧄 3 garlic cloves (minced)
🧅 1 onion (chopped)
🍅 400 g canned peeled tomatoes
🧀 150 g grated Parmesan cheese
🥛 200 ml whipping cream
🧈 2 tablespoons butter (for greasing)
🫒 2 tbsp olive oil
🧂 Salt and pepper to taste
🌿 Fresh thyme or basil (for garnish)

Instructions:
Preheating & Preparation
Preheat the oven to 180°C. Grease a baking dish with butter.
Preparing eggplants
Sprinkle the eggplant slices with some salt and let them sit for 15 minutes to extract excess moisture. Then pat dry with paper towels.
How to Make Tomato Sauce
Heat olive oil in a pan and sauté the onion and garlic until golden brown. Add the peeled tomatoes and season with salt and pepper. Let the sauce simmer for 10 minutes, until it has thickened slightly.
Baking eggplants
Heat a griddle pan or frying pan and grill the eggplant slices on both sides until golden brown. This will take about 2-3 minutes per side.
Building up gratin
Place a layer of eggplant slices in the greased baking dish. Pour a little tomato sauce over the slices and sprinkle with Parmesan cheese. Repeat this process until all the ingredients have been used, ending with a layer of cheese.

Finish with cream
Pour the whipped cream evenly over the top of the gratin and add some extra Parmesan cheese if desired for a crispy top layer.
Bake
Place the dish in the preheated oven and bake the gratin for 25-30 minutes, or until the top is golden brown and bubbly.
Serve
Remove the gratin from the oven and allow it to cool for a few minutes before serving. Garnish with fresh thyme or basil.
