These Mini Meatloaf Muffins are a fun and convenient twist on classic meatloaf. They’re perfectly portioned, easy to customize, and bake up quickly in a muffin tin. The sweet and tangy glaze adds a delicious finishing touch.

Meatloaf:

Chopped Onion ½ cup
Chopped Bell Pepper ½ cup
Worcestershire Sauce 2 teaspoons

Dijon Mustard 1 teaspoon
BBQ Sauce ¼ cup
Bread Crumbs ⅔ cup
Italian Seasoning 1 teaspoon
Garlic Powder 1 teaspoon
Large Egg 1
Salt To taste
Pepper To taste

Glaze:

BBQ Sauce ¼ cup
Ketchup ¼ cup
Honey 1 tablespoon

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C).
  2. Prepare muffin tin: Thoroughly grease a 10-cup muffin tin with cooking spray or butter.
  3. Combine meatloaf ingredients: In a large mixing bowl, combine the ground beef, chopped onion, chopped bell pepper, Worcestershire sauce, chopped fresh parsley, Dijon mustard, ¼ cup BBQ sauce, bread crumbs, Italian seasoning, garlic powder, large egg, salt, and pepper to taste.
  4. Knead the mixture: Use your hands to knead the mixture until all the ingredients are evenly combined.
  5. Portion into muffin tin: Divide the meatloaf mixture evenly into the 10 prepared muffin cups.
  6. Prepare the glaze: In a small bowl, stir together the ¼ cup BBQ sauce, ketchup, and honey until well combined.
  7. Glaze the meatloaves: Top each mini meatloaf muffin with the prepared glaze, spreading it evenly over the surface.
