Ingredients:
π³ 2 large eggs
π 100 g granulated sugar
π― 1 teaspoon vanilla extract
π 1 teaspoon lemon zest (grated)
π 100 g flour
π§ 100 g unsalted butter (melted and cooled)
π§ 1 pinch of salt
π§ Extra butter to grease the ramekins
π Powdered sugar for sprinkling (optional)
Instructions:
Prepare:
Grease a madeleine mold with butter and dust lightly with flour. Preheat the oven to 190Β°C (convection oven 180Β°C).
Egg mixture:
Whisk the eggs and granulated sugar together in a bowl with a hand mixer until the mixture is light and fluffy, about 5 minutes. Add the vanilla extract and grated lemon zest and mix briefly again.
Add flour:
Sift the flour and salt over the egg mixture and gently fold until well combined.
Melted butter:
Add the melted butter and gently fold it into the batter until it is fully incorporated.
Filling Molds:
Spoon the batter into the prepared madeleine molds, filling them about three-quarters full.
Bake:
Bake the madeleines in the preheated oven for 10-12 minutes, or until the edges are golden brown and the characteristic ‘bellies’ appear on the madeleines.
To cool and serve:
Remove the madeleines from the oven and let them cool briefly in the tin. Then remove them from the tin and let them cool further on a wire rack. Dust them with powdered sugar before serving, if desired.
