Lemon Mousse: The Incredibly Creamy Dessert

Ingredients:
🍋 3 large lemons (juice and zest)
🍚 100 g sugar
🥛 250 ml whipping cream
🍶 3 egg yolks
🍰 4 sheets of gelatin
🍪 Crumbled cookies (optional for the base)
🫐 Blueberries and mint leaves (for decoration)

Preparation:
Gelatin soaking: Soak the gelatin sheets in cold water according to package directions.
Lemon mixture: Heat the lemon juice with the sugar over low heat, until the sugar is completely dissolved. Remove from heat and add the soaked gelatin. Allow to cool to room temperature.
Mixing egg yolks: Lightly beat the egg yolks and add them to the cooled lemon mixture. Stir well.
Whipping cream: Whip the cream until stiff and carefully add the lemon mixture. Mix well, but not too quickly, to maintain a fluffy mousse.

Building up the mousse: Fill glasses with a layer of crumbled biscuits if you want to add a base, then spoon the lemon mousse on top.
Cooling: Allow the glasses to set in the refrigerator for at least 2 hours.
Decorate: Before serving, garnish with some whipped cream, blueberries and a sprig of mint for a fresh finish.
